In Passo Corese, in the municipality of Fara in Sabina, Gusto Romano e… brings to the table the most recognizable flavors of Roman cuisine, pairing them with dishes that expand the menu without losing touch with the authentic and generous traditions of the region.
At the helm of the kitchen is Chef Andrea Bucaioni, who reinterprets traditional recipes with a focus on preparation, the quality of the ingredients, and presentation.

In addition to the à la carte menu, the restaurant also offers an All You Can Eat option, available for both lunch and dinner, designed to allow guests to sample a variety of dishes and enjoy Roman cuisine in a relaxed, convivial atmosphere.

Culinary offerings
The Menù
The menu showcases Roman cuisine through homemade appetizers and fried dishes, featuring traditional offerings such as coratella, beans with pork rinds, panzanella, supplì, and coccetti.
The first course features plenty of great classics: rigatoni with pajata, mezze maniche alla carbonara, tonnarelli cacio e pepe, bucatini all’amatriciana, and gricia. These are complemented by specialties made with fresh, handmade pasta, including fettuccine, ravioli, and pappardelle, paired with seasonally inspired sauces.
Main courses range from saltimbocca alla romana to coda alla vaccinara, from tripe to Grandma’s meatballs and abbacchio, all the way to the chef’s special meat dishes and creations.
On the weekend, the menu also features seafood, including risotto with scampi cream, tonnarelli with mussels and pecorino cheese, Roman-style salt cod, and fried and grilled dishes. Tasting menus and gluten-free options are also available.
