La Taverna dei Corsari

Pizza, artisanal doughs and bold local cuisine in Montopoli di Sabina

Passion, doughs and a clear identity

In the heart of Montopoli di Sabina, La Taverna dei Corsari is a restaurant created from the passion of Emiliano Aureli, who has built over the years a distinctive culinary identity grounded in quality ingredients and careful attention to every detail.

The restaurant has grown with consistency, combining a warm and convivial atmosphere with a strong focus on research, balance and craftsmanship. It is a place where the informal spirit of the dining experience is matched by precise work on doughs, preparation methods and ingredient selection.

Over time, La Taverna dei Corsari has become especially known for its pizza and its wide range of artisanal leavened specialties, the result of study, experience and ongoing experimentation. Fried specialties prepared with the same care, a wine list dedicated to the excellence of Lazio, and a beer selection linked to the local area all contribute to the character of the restaurant.

The restaurant has also received attention beyond the local territory, being included among the venues featured in The Great Pizza 100 Italy 2026.

During the warmer months, dining outdoors adds another dimension to the experience, thanks to the open view over the surrounding landscape and an atmosphere that invites guests to slow down and enjoy their time at the table.

The Menù

The menu combines tradition and creativity, with particular attention to pizza, fried specialties and a selection of pasta dishes that broaden the table while keeping the same focus on flavor and identity.

Alongside the classics, the menu features richer and more contemporary combinations, with ingredients such as local pecorino cheese, guanciale, smoked provola, burrata, mortadella, sheep’s milk ricotta, pistachio pesto and Argentinian red shrimp.

The offering also includes meat dishes such as beef tagliata and slow-cooked cockerel, as well as a maxi pizza designed for a more convivial and shared dining experience.
